Pork Medallions in Gravy Sauce

  • 3/4 lb pork tenderloin trimmed
  • 1 clove garlic minced
  • 1.5 Tbsp brown sugar
  • 1/2 Tbsp Montreal steak seasoning
  • 1 Tbsp olive oil
  • 2 Tbsp butter
  • 1/4 cup beef broth


  • Cut pork into 1-inch-thick slices.
  • Stir together garlic, brown sugar and steak seasoning; rub mixture over pork slices.
  • Cook pork in hot oil in a nonstick skillet over medium heat 2 to 3 minutes per side or until done.
  • Remove from pan, and keep warm.
  • Melt butter in skillet; stir in beef broth.
  • Bring to a boil, reduce heat, and simmer 1 minute, stirring often.
  • Serve sauce over pork.
