Korean Beef
Ingredients
- 1 pound ground beef
- 1/4 cup brown sugar heaping (for keto use 2 squirts of liquid stevia)
- 1/2 cup soy sauce I use low-sodium
- 2 Tbsp Sesame Oil
- 6 cloves garlic minced or 3/4 tsp Garlic Powder
- 1 teaspoon fresh ginger minced (see note) or 1/2 tsp ground ginger
- 1 Tbsp sriracha sauce to desired spiciness
- 1/2 lime zest & juice
- 1/2 tsp xanthan gum powder heaping tsp to thicken sauce
- 1 bunch green onions diced (don't skip this!)
- 3 stalks celery chopped
- 1/2 English cucumber chopped
Instructions
- In a small saucepan combine sugar, soy sauce, sesame oil, garlic, ginger, sriracha, lime juice & zest.
- Heat saucepan to a slow boil to reduce and begin cooking meat in next step.
- Heat a large skillet over medium heat and brown hamburger and then drain fat.
- Add Green onions & celery to drained meat and saute a couple minutes while finishing sauce.
- Thicken sauce by stirring in xanthan gum powder and reduce until consistency coats the back of a spoon.
- Pour sauce over beef & vegetable mixture. Cover & simmer for 5-10 minutes
- Serve with rice and diced cucumbers.
