Scoop avocado flesh into small mixing bowl with salt, pepper and chipotle seasoning and mash with a fork briefly
Chop half of a small tomato, red onion, cilantro. grate cheese and add to avocado in mixing bowl.
Squeeze juice from lime into the bowl and mix with a fork.
Line a plate with a paper towel and place pepperoni pieces in a single layer as spread out as possible.
Microwave pepperoni on plate for 30 seconds until pepperoni are firm and "chip" consistency.
Serve pepperoni chips with guacamole immediately.
