Susan’s Salsa

Directions
- Make sure you have one or more ingredient from each color group of the Mexican Flag.
- The ingredients may be fresh chopped, pureed in the blender, or cooked in a pot. Amounts are to taste.
Red
- diced tomatoes
- roasted tomatoes
- canned tomato sauce
- canned diced tomatoes
- toasted tomatillos (green)
White
- chopped onion
- minced fresh garlic
- chopped green onions
Green
- diced fresh green chili
- roasted/toasted green chili
- toasted dry (red) chili
- (red) chili flakes
- chopped cilantro
Additional flavoring that may be used
- salt
- cumin
- vinegar or lemon juice
- sugar
- oregano
Sarah’s Favorite Salsa Variation
- 2 (16 oz) cans of fire-roasted tomatoes
- 2 medium tomatoes chopped
- 1 cup of cilantro
- 1/4 – 1/2 cup red onion chopped
- juice from 2 limes
- 1 tsp salt
Blend all ingredients in a blender on the ‘chop’ setting.
