Susan’s Salsa

Directions

  1. Make sure you have one or more ingredient from each color group of the Mexican Flag.
  2. The ingredients may be fresh chopped, pureed in the blender, or cooked in a pot. Amounts are to taste.

Red

  • diced tomatoes
  • roasted tomatoes
  • canned tomato sauce
  • canned diced tomatoes
  • toasted tomatillos (green)

White

  • chopped onion
  • minced fresh garlic
  • chopped green onions

Green

  • diced fresh green chili
  • roasted/toasted green chili
  • toasted dry (red) chili
  • (red) chili flakes
  • chopped cilantro

Additional flavoring that may be used

  • salt
  • cumin
  • vinegar or lemon juice
  • sugar
  • oregano

Sarah’s Favorite Salsa Variation

  • 2 (16 oz) cans of fire-roasted tomatoes
  • 2 medium tomatoes chopped
  • 1 cup of cilantro
  • 1/4 – 1/2 cup red onion chopped
  • juice from 2 limes
  • 1 tsp salt

Blend all ingredients in a blender on the ‘chop’ setting.
