Beef Tacos

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, minced
  • 3 garlic cloves minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper
  • salt
  • 1 lb 90% lean ground beef
  • 1/2 cup smooth canned tomato sauce
  • 1/2 cup low-sodium chicken broth
  • 2 tsp cider vinegar
  • 1 tsp light brown sugar
  • 8 taco shells

Directions

  1. Heat the oil in a medium skillet over medium heat until shimmering. Add the onion and cook until softened, about 5 minutes. Stir in the garlic, spices, and 1 tsp salt and cook until fragrant, about 30 seconds.
  2. Stir in the ground beef and cook, breaking it up with a wooden spoon, until no longer pink, about 5 minutes. Stir in the tomato sauce, broth, vinegar, and sugar and simmer until thickened, about 10 minutes. Season with salt to taste.
  3. Divide the filling evenly among the taco shells and serve, passing any desired accompaniments separately.
