Refried Beans


  • 2 cups pinto beans (3/4 lb)
  • Water
  • 1-2 tsp salt
  • 2 Tbsp oil
  • 2 Tbsp chopped onion
  • 2 Tbsp minced garlic clove
  • 4 Tbsp oil
  • 1/2 Tbsp flour
  • 1/4 Cup condensed milk
  • 1/2 lb Monterey Jack cheese, grated
  • Pork or bacon rind (optional)


  1. Soak beans in cold water overnight
  2. Drain, cover with water, add salt, 2 tablespoons oil, onion, garlic and pork or bacon rind
  3. Bring to a boil, cover and simmer till tender, about 3-4 hrs
  4. Heat 4 tablespoons oil in frying pan, add flour and brown
  5. Add 2 cups cooked beans and juice and bring to a boil
  6. Mash with potato masher till creamy (If you want it creamier, add more bean juice or water, if you want it drier as for burritos or tostadoes, cook liquid off)
  7. For creamy delicious refried beans, add milk and cheese
